Barbecue and Blue Cheese Bison Burger

About This Recipe

“This burger is super lean and healthy but not lax on flavor.. If you haven’t tried buffalo this is a great place to start. I use my recipe for Cholestoral free mayo in this recipe”
Ingredients

2 lbs ground buffalo meat ( buffalo)
2 tablespoons finely chopped fresh sage
1 1/2 teaspoons salt
2 teaspoons black pepper
1/2 onions, finely chopped
2 tablespoons vegetable oil
6 pieces butter lettuce
1 1/2 cups barbecue sauce
6 tomatoes
1 1/2 cups crumbled blue cheese
1 cup mayonnaise
6 kaiser rolls
1/2 cup butter

Directions

Sauté the onions in the olive oil over medium-high heat until translucent. Turn off the heat and let it cool.
2 When the onions are cool enough to touch, use your (clean) hands to gently mix them in with the bison burger meat, and add everything else. Do not overwork the meat, it will result in a tough burger. Just gently fold it until the onions, sage, salt and pepper are well mixed inches.
3 Form patties with the meat, using about 1/4 to 1/3 of a pound of meat per patty. Here’s a tip on making the patty: if you press a slight indentation in the center of each patty it will help keep the burgers in a nice disk shape when cooking. Otherwise the burger will start to get a little egg-shaped as the edges contract from cooking.

4 Grill or fry the burgers on medium heat, about 6-7 minutes per side, less or more depending on the thickness of the burger and the heat of the pan/grill, or until the internal temperature is 140°F for medium rare, or 160°F for well done. A note on internal temperature. If you are getting the ground meat from a source you trust (we got ours from Whole Foods) that does their own grinding on site, or you grind your own meat, you can safely cook the burgers rare or medium rare. Otherwise you’ll want to cook the burgers until well done. Don’t press on your burgers while cooking, and keep the flipping to a minimum. Let the burgers rest about 5 minutes before serving.
Spread butter on each bun and place in in a hot skillet butter side down for a couple seconds until toasted.
Mix bleu cheese in mayo and spread on bun.

Grilled Buffalo Chicken Sandwiches with Blue Cheese Coleslaw

Ingredients

8 boneless, skinless chicken thighs
1 bottle KC Masterpiece Buffalo Marinade

Blue Cheese Coleslaw

1 bag pre-shredded coleslaw with carrots
1 cup crumbled blue cheese
1 16-ounce bottle of ranch dressing
8 sub rolls

Preparation

Trim all fat from chicken thighs. Then, lightly pound thighs with a meat mallet until they are an even thickness, approximately 1/4 of an inch.
Place thighs into a re-sealable food storage bag and pour in marinade until it coats thighs. Marinate in refrigerator for a minimum of 1.5 hours.
While chicken is marinating, prepare blue cheese coleslaw. Start by combining one cup of blue cheese with a bottle of ranch dressing. Then, add mixture to prepared coleslaw mix until dressing coats vegetables. Set aside and chill until needed.
Build a charcoal fire for indirect grilling, by situating coals on only one side of grill, leaving the other side void. Add a small aluminum pan to the void side of the grill and fill it halfway with water.
When charcoal grill reaches between 450 and 500 degrees F, take chicken thighs and grill directly over coals for 30 to 45 seconds on each side to sear. Once both sides are seared, move thighs to the void side of the grill. Place lid on grill and cook thighs indirectly for 10 minutes, or until thighs reach an internal temperature of 160 degrees F. Then remove from grill.
Assemble sandwiches on sub rolls, topping grilled chicken with blue cheese coleslaw.

Grilled BBQ Bacon Shrimp

Ingredients

16 (10-inch) wooden skewers
2 tablespoons butter
1/2 cup finely chopped onions
1 small jalapeno, seeded and chopped
1/2 teaspoon cayenne pepper
Salt and freshly ground black pepper
1 (1-inch) piece ginger, grated
1/2 cup dark brown sugar
1/4 cup orange juice
1 cup ketchup
16 colossal shrimp, shelled with tail on, deveined (about 1 1/4 pounds)
4 slices bacon

Directions

Preheat grill to medium.

Soak skewers in water while preparing the BBQ sauce. In a medium saucepan melt butter and saute onions and jalapeno, until tender. Season with cayenne, and salt and pepper. Add ginger, brown sugar, orange juice and ketchup in that order making sure to blend each ingredient completely before adding the next ingredient. Let simmer until the edges begin to caramelize, about 15 minutes. Set aside and let cool. Once cool, remove half of the sauce and reserve for dipping. The other half is for brushing on the shrimp when grilling. Cut bacon in thirds. Thread each shrimp onto a skewer, starting from the tail end. Bend the shrimp as you thread it so it lies in 1 straight line on the skewer, removing its natural curve. Wrap the center of each shrimp with a piece of bacon. Brush with BBQ sauce and place skewers with bacon, seam side down, onto the grill. Cook over medium heat until bacon crisps and shrimp is cooked through, about 8 minutes.

Kindergarten BBQ Lesson: How to Make Cheeseburgers

Ingredients:
Hamburger Patties-

2 lbs ground hamburger
Salt and black pepper (to taste)
4 slices cheddar cheese
lettuce (washed and torn)
2 tomatoes (washed and sliced)
4 hamburger buns

Burger Sauce-

½ cup mayonnaise
1 tablespoon ketchup
1 tablespoon yellow mustard
4 slices dill pickle
¼ teaspoon garlic powder
¼ teaspoon paprika
1 pinch cayenne pepper

Step 1: To make the burger sauce- in a blender combine mayonnaise, ketchup, mustard, dill pickle slices, garlic powder, paprika, and cayenne pepper. Blend until smooth. Pour into a bowl, cover, and refrigerate until needed.
Step 2: Form ground hamburger into 4 patties. Season on both sides with salt and pepper. Heat an outdoor grill to medium-high heat. Grill hamburgers for 5-7 minutes per side or until the internal temperature has reached 160 degrees. During the last few minutes of cooking top each burger with a slice of cheddar cheese. Once the cheese has melted remove from the grill.
Step 3: To assemble burgers. Place a hamburger patty on the bottom half of a bun. Top with lettuce and tomato. Spread a layer of the burger sauce onto the bottom of the top half of the bun. Place on top burger.
Yield: (4 Servings)

Oven Baked Barbecue Beef Brisket

For when its rainy, oven baked bbq

3-5 lb. beef brisket
Liquid smoke
Pepper
Garlic Powder
Celery Salt
Onion Salt
Paprika
Meat Tenderizer (unseasoned)
Worcester Sauce
BBQ sauce (Honey Masterpiece)
1. Cover both sides of brisket w/ about 2 oz.  of liquid smoke.
2. Generously cover both sides with pepper, garlic powder, celery salt, onion salt, paprika and meat tenderizer.
3. Cover with foil and refrigerate overnight.
4. Next morning, sprinkle with Worcester sauce.
5. Bake 4-5 hours @ 300 (foil over tightly)
6. Take out and allow to cool for 2-3 hours,covered.
7. Uncover and slice meat.
8. Add BBQ sauce to juices in pan and mix.
9. Put meat back in pan and cover w/ juice mix.
10. Cook for additional 45 minutes to 1 hour at 200 degrees.

Grilled Rack of Pork with Sherry Vinegar BBQ Sauce

Ingredients

1/2 cup plus 4 teaspoons kosher salt
1/2 cup light brown sugar
1/4 cup yellow mustard seeds
1/4 cup whole black peppercorns
8 sprigs fresh thyme
1 Spanish onion, peeled and quartered
One 4-pound center cut rack of pork, chine and feather bones removed
4 tablespoons Spanish paprika
4 teaspoons cumin seeds, ground
4 teaspoons fennel seeds, ground
4 teaspoons black mustard seeds, ground
2 teaspoons coarsely ground black pepper
Canola oil
Sherry Vinegar BBQ Sauce, recipe follows

Directions

Combine 10 cups water, 1/2 cup kosher salt, brown sugar, mustard seeds, peppercorns, thyme and onions in a large glass bowl or a plastic container. Add the pork, cover and refrigerate for at least 4 hours and up to 12 hours. Thirty minutes before grilling, remove the pork from the brine, rinse with cold water, pat dry and let sit out at room temperature.

Prepare a charcoal grill for direct and indirect cooking.

Combine the paprika, cumin, mustard, fennel, the remaining 4 teaspoons salt and ground pepper in a bowl. Rub the pork with the spices and drizzle with canola oil. Sear the pork over direct heat on both sides until lightly golden brown and a crust has formed, about 5 minutes per side. Move the pork over indirect heat (inside of grill should be at about 375 degrees F) and cook, brushing with the Sherry Vinegar BBQ Sauce every 5 minutes or so, until a thermometer inserted in the center registers 145 degrees F, about 1 hour and 15 minutes. Brush with the sauce every 10 minutes or so after the first 45 minutes.

Remove from the grill, loosely tent with foil and let rest 15 minutes before slicing. You can either slice into individual chops, or slice the loin off the bones and thinly slice.
Sherry Vinegar BBQ Sauce:

1 cup ketchup
1 cup aged sherry vinegar
1/2 cup homemade chicken stock
1/4 cup dark brown sugar
2 tablespoons Dijon mustard
2 tablespoons Spanish paprika
2 teaspoons finely chopped fresh thyme
Kosher salt and freshly ground black pepper
Honey

Combine the ketchup, vinegar, chicken stock, brown sugar, mustard, paprika and thyme in a medium saucepan and simmer over medium heat until reduced by half. Season with salt, pepper and honey. Let cool to room temperature.
