This is what it takes to achieve barbecue fame in North Carolina:

Six days a week at 5 a.m., Jeff Jones, 63, crosses the two-lane highway in front of his house and walks up to the Skylight Inn in Ayden, a tiny farm town just outside of Greenville.

It’s five hours before the opening of the restaurant that is so revered in the world of barbecue that the owners put a replica of the Capitol dome on the roof.

Jones grabs a beat-up wheelbarrow and pulls it backward behind him as he trudges into a field littered with wood. He loads up with split logs of hickory and oak and hauls it into the smokehouse.

Then he starts another day of making barbecue.

Not just any barbecue: Wood-cooked barbecue, the famed chopped pork that draws fans from all over to the Carolinas. It’s been made here for generations, but is dwindling as restaurants across the South switch to cheaper and easier cooking methods.

Today, the fate of wood-fired barbecue rests with about two dozen restaurants. No one can say whether it will be here for future generations. But for the moment, the institution stubbornly smolders on in small towns from Shelby to Ayden where families carry on the tradition with the support from both locals and food fans in search of authentic fare.

Bring On The Barbecue But Remember Food Safety

Holtville, California (NAPSI) – Whatever you serve up at your next barbecue, don’t add a side of bacteria. To help prevent harmful bacteria from multiplying and causing foodborne illness, follow these tips from the USDA:

From the Store: When shopping, buy cold food such as meat and poultry last, right before checkout. Separate raw meat and poultry from other food in your shopping cart. To guard against cross-contamination, put packages of raw meat and poultry into plastic bags. Drive directly home and refrigerate perishable food within two hours, one hour if the temperature is above 90° F.

Thaw Safely: Use the refrigerator for slow, safe thawing or thaw sealed packages in cold water. You can thaw food in the microwave just before putting it on the grill.

Marinating: A marinade is a savory, acidic sauce in which a food is soaked to enrich its flavor or to tenderize it. Marinate food in the refrigerator, not on the counter. Poultry and cubed meat or stew meat can be marinated up to two days. Beef, veal, pork and lamb roasts, chops and steaks may be marinated up to five days.

If the marinade is to be used as a sauce on the cooked food, reserve a portion before putting raw meat and poultry in it. If the marinade used on raw meat or poultry is to be reused, boil it first.

Transporting: When taking food to another location, keep it cold to minimize bacterial growth. Use an insulated cooler with sufficient ice or ice packs to keep the food at 40° F or below.

Keep Cold Food Cold: Keep meat and poultry refrigerated until ready to use. When using a cooler, keep it out of the sun and avoid opening the lid too often.

Keep Everything Clean: To prevent foodborne illness, don’t use the same platter and utensils for raw and cooked meat and poultry. Harmful bacteria present in raw meat and poultry and their juices can contaminate safely cooked food. Bring water for preparation and cleaning. Or pack clean cloths and moist towelettes for cleaning surfaces and hands.

Precooking: Precooking food partially in the microwave, oven or stove is a good way to reduce grill time. Make sure that the food goes immediately on the preheated grill to complete cooking.

Cook Thoroughly: Meat and poultry that are cooked on a grill often brown very fast on the outside. Use a food thermometer to be sure the food has reached a safe minimum internal temperature. For more tips, visit http://www.fsis.usda.gov/factsheets/barbecue_food_safety/index.asp.

Baked Beans for your Summer BBQ

What else screams “summer bbq” like a bit pot of baked beans? Perfect with burgers, chicken, hot dogs and more. Whether you like them with bacon or not, I have always liked to follow this recipe. If you want a little more kick, add some sliced jalapeno or diced green chiles. Another favorite of mine is this one. If you try them out, let me know which one you like best.

Shredded BBQ Pork Sandwich

Ingredients:
Pork Shoulder
Beer
Onions
Big Racks BBQ Sauce only available at the restaurant or Sweet Baby Ray’s BBQ Sauce
Cole Slaw
Swiss Cheese
Hamburger Buns

Method:
Braise your pork shoulder by putting in a crock pot with beer and onions. Cook for 4-6 hours. When pork is fork tender, shred while it is still hot. Toss with BBQ Sauce. Place a substantial scoop of pork on the bottom bun. Top with a slice of Swiss cheese and a spoonful of your favorite cole slaw . Cover with top bun, and enjoy barbecue Dallas

Basic Dallas barbecue sauce

Ingredients:

2 cups ketchup
1/4 cup firmly packed brown sugar
1/4 cup Worcestershire sauce
1/4 cup cider vinegar
2 tablespoons molasses
1 tablespoon Tabasco sauce
2 tablespoons yellow mustard
1 tablespoon favorite barbecue rub (oooh, creative license!)
1/2 teaspoon black pepper

Directions: Combine all of the ingredients in a saucepan over medium-high heat. When the sauce begins to boil, reduce the flame to medium-low, and simmer for about 10 to 15 minutes, giving the flavors a chance to meld.

… and that’s it! No more worry about messing up that sauce, Justin! Just douse your steaks, chicken breasts, and veggies with this tasty number, and make sure to keep an eye on your grillin’. Nobody likes the burnt parts!

Stuffed Flank Steak

Ingredients:

1 large flank steak (if possible have butcher cut a deep pocket into the steak or use a sharp knife and cut the pocket)
1/4 pound Provolone Cheese, sliced
1/4 pound Genoa Salami (or your favorite Salami)
Salt and Pepper

Directions:

Turn on BBQ on a high heat.

Fill the pocket of your flank steak with half the salami, then all of the provolone cheese, and cover with the other half of the Salami.

Close with a skewer.

Season the outside of the flank steak with salt and pepper.

Place on the BBQ and sear both sides.

Turn down heat to 350 degrees and cook with indirect heat for 30-40 minutes (When you can smell the salami cooking, you are ready)
