Scallops With Chipotle-Orange Sauce

Ingredients:

* 2 tablespoons butter, divided
* 1 teaspoon olive oil
* 1 1/2 lbs large scallops, approx. 16
* 1/2 teaspoon paprika
* 1/4 teaspoon salt, divided
* 1/2 cup orange juice, freshly squeezed
* 1/2 teaspoon orange zest, finely grated
* 1 tablespoon chipotle chile in adobo, finely chopped
* 1/4 cup green onion, chopped

Directions:

Prep Time: 10 mins Total Time: 20 mins

1. Melt 1 tbsp. butter in large skillet over medium-high heat, add olive oil.
2. Season scallops with paprika and 1/8 teaspoon salt.
3. Add scallops to pan and cook quickly approximately 2 to 3 minutes on each side or until browned. Do not overcook scallops!
4. Remove from pan and set aside, keep warm.
5. Add orange juice, zest and chile to pan, scraping to loosen browned bits.
6. Bring to a boil, cook about 2 minutes.
7. Add remaining butter and salt, stirring with a whisk until sauce is smooth.
8. Serve scallops with sauce, sprinkle with onions.
9. Recommend serving with rice and steamed broccoli florets.

Chicken with Papaya BBQ Sauce

Ingredients

Papaya Chicken Marinade

  • 1/4 cup coconut cream from top of 1 can
  • Seeds of 1 large papaya
  • 1 clove garlic, minced
  • 1 tablespoon ginger, minced
  • Zest and juice of 1 lime
  • Zest and juice of 1 lemon
  • 2 tablespoons cilantro stems, chopped
  • 4 boneless skinless chicken breasts

Papaya BBQ Sauce

  • 1 tablespoon vegetable oil
  • 1 sweet onion, finely diced
  • 3/4 cup sugar
  • 1 scotch bonnet pepper, pith and seeds removed and quartered
  • zest and juice of 2 limes
  • zest and juice of 1 lemon
  • 1 cup water
  • 1/2 cup seasoned rice wine vinegar
  • 5 cups papaya, large dice
  • 2 teaspoons salt

To Grill Chicken

  • 1 tablespoon vegetable oil
  • 1/4 cup Papaya BBQ sauce
  • 1/4 cup Spiced Cashew Nuts, coarsely chopped
  • 1 tablespoon cilantro leaves, (optional garnish)

Spiced Cashew Nuts

  • 1 teaspoon butter
  • 1/2 cup unsalted cashews
  • pinch of paprika
  • pinch of salt

Directions

Papaya Chicken Marinade

  1. In a bowl, combine all ingredients for the marinade (except chicken).
  2. Add chicken and immerse in marinade.
  3. Set aside to marinate for a minimum of 1 hour up to 24 hours.
  4. Prepare Papaya BBQ Sauce.

Papaya BBQ Sauce

  1. Heat oil in a pot over medium heat and add onion. Cook and stir until translucent ensuring onion does not brown.
  2. Add sugar, scotch bonnet, zest of limes and lemon. Allow sugar to dissolve.
  3. Add water, juice from lemon, limes and vinegar.
  4. Bring to a boil.
  5. Add papaya and season with salt.
  6. Bring to a boil again and allow to simmer for 15 minutes.
  7. Using a blender, puree sauce until smooth.

To Grill Chicken

  1. Heat and oil grill.
  2. Remove chicken from marinade and place on grill.
  3. Baste each breast with 2 tablespoons of Papaya BBQ Sauce, continue basting occasionally until chicken is cooked through.
  4. Garnish with chopped Spiced Cashews and cilantro leaves.

Spiced Cashew Nuts

  1. In a small frying pan, melt butter over medium heat.
  2. Add cashews until golden brown. Remove from heat, add paprika and salt.
  3. Reserve half of Spiced Cashew Nuts and chop for chicken and reserve the remainder whole for the watercress salad.

Spicy BBQ Chicken

The traditional BBQ sauce for grilled chicken (or ribs!) that everyone has had at some point — very tasty with a little extra personality. You will not regret cooking!

Ingredients

  • 2 tablespoons vegetable oil
  • 1/4 cup onion, finely chopped
  • 1 clove garlic, minced
  • 3/4 cup ketchup
  • 1/3 cup vinegar
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons brown sugar
  • 1 teaspoon dry mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 (5 ounce) bottle hot pepper sauce
  • 1 (3 pound) chicken, cut into pieces

Directions

  1. Heat the oil in a skillet over medium heat and cook the onion and garlic until tender. Mix in ketchup, vinegar, Worcestershire sauce, brown sugar, dry mustard, salt, pepper and hot sauce. Bring to a boil. Reduce heat to low and simmer 10 minutes, stirring occasionally. Remove from heat and set aside.
  2. Preheat grill for high heat.
  3. Lightly oil grill grate. Place chicken on grill. Brush constantly with the sauce and cook 8 to 15 minutes on each side, depending on size of piece, until juices run clear. Discard any remaining sauce.

Seafood Mixed Grill

This very simple and fresh recipe features scallops and shrimp cooked in lemon juice, butter, and spices in a one dish meal packet on the grill.
Prep Time: 10 minutes Cook Time: 10 minutes Total Time: 20 minutes
Yield: 4 servings
Ingredients:

* 1/2 lb. bay scallops
* 1 lb. uncooked large shrimp, peeled
* 2 Tbsp. chopped fresh thyme leaves
* 1/8 tsp. white pepper
* 1/2 tsp. salt
* 1/4 cup melted butter
* 2 Tbsp. lemon juice

Preparation:
Prepare and heat grill. Coat 18″ x 18″ square of heavy duty aluminum foil with cooking spray and arrange scallops and shrimp on prepared foil. Sprinkle with herbs, pepper and salt, and drizzle with butter and lemon juice. Seal foil around seafood loosely, with double folded seams.

Grill, covered, 4-6″ from medium heat for 8-10 minutes until shrimp are pink and curled and scallops are white and opaque.

Shrimp and Scallops Citrus Kebabs

These seafood kebabs are marinated in citrus juices so you won’t want to marinate them for too long or they’ll start to cook from the acid. Grill them hot and fast and enjoy along with your favorite side dish.
Prep Time: 10 minutes Cook Time: 6 minutes Total Time: 16 minutes
Yield: Serves 4
Ingredients:

* 1/2 pound scallops
* 1/2 pound large shrimp, shelled and deveined
* zest of 1 lemon
* juice of 1 lemon
* juice of 1 lime
* juice of 1 orange
* 3 tablespoons orange liqueur

Preparation:
Combine all ingredients in a nonreactive bowl and refrigerate for 30 minutes. Remove scallops and shrimp from marinade and thread onto skewers. Preheat grill. Place kebabs on grill and cook until done. Total cooking time should be about 6 minutes.

Honey-mustard BBQ ribs recipe

3-1/2 lbs boneless pork country-style ribs
1 cup bottled favorite BBQ sauce
1 (8 oz jar) honey mustard
2 tsp. zesty herb grill seasoning blend

Place ribs in a 3 1/2 to 4 quart slow cooker. In a small bowl, combine BBQ sauce, honey mustard, and seasoning blend. Pour over ribs, stir to coat. Cover, cook on low-heat setting for 8-10 hours, or on high-heat setting for 4-5 hours. Transfer ribs to a serving platter.

Strain sauce, skim off fat. Drizzle some of the sauce over the ribs and serve ribs with remaining sauce.

Grilled Salmon with Basil Aïoli

Basil aioli:

* 2 large egg yolks (preferably organic)
* 2 tablespoons chopped fresh basil
* 2 garlic cloves, minced
* 2 anchovy fillets, minced (1 1/3 teaspoons)
* 1/2 teaspoon red wine vinegar
* 1/2 teaspoon Worcestershire sauce
* 1 cup olive oil
* 1 tablespoon warm water
* 1 tablespoon fresh lemon juice
* 1/4 teaspoon (generous) hot pepper sauce

Salmon:

Olive oil (for brushing)
1 2 1/2- to 3-pound skinless salmon fillet (about 1 inch thick)
Blistered Baby Zucchini, Baby Pattypan Squash, and Grilled Tomatoes

For basil aioli:
Whisk egg yolks, basil, garlic, anchovies, vinegar, and Worcestershire sauce in medium bowl. Whisk in 2 tablespoons oil a few drops at a time, then gradually whisk in remaining oil in thin stream. Whisk in 1 tablespoon warm water, lemon juice, and hot pepper sauce. Season to taste with salt and pepper. Cover and chill. DO AHEAD: Can be made 1 day ahead. Keep chilled.

For Salmon:
Prepare barbecue (high heat). Brush grill rack with oil. Brush salmon with oil; sprinkle with salt and pepper. Grill salmon uncovered 5 minutes. Using 2 large spatulas, carefully turn fish over. Grill until fish just begins to flake in center, 4 to 5 minutes longer. Transfer salmon to platter. Arrange Blistered Baby Zucchini, Baby Pattypan Squash, and Grilled Tomatoes around salmon. Serve with aioli.

BBQ Turkey Recipe

Ingredients

  • 2 cups butter, divided
  • 1 (15 pound) whole turkey, neck and giblets removed
  • 1/4 cup chicken soup base
  • 3 sweet onions, peeled and cut into wedges
  • 5 apples, cored and cut into wedges
  • 2 tablespoons minced garlic, or to taste
  • 1 (750 milliliter) bottle dry white wine

Directions

  1. Preheat a gas grill for low heat.
  2. Rub some of the butter all over the turkey, inside and out, then rub all over with chicken base. Cut remaining butter into cubes and toss with onions, apples, and garlic in a large bowl. Stuff the bird with this mixture and place in a disposable aluminum roasting pan. Fold the turkey skin around the neck area to cover the hole and then turn the turkey over and pour wine into the opening at the other end until the turkey is full or the bottle is empty. Set the turkey breast side up.
  3. Place the roasting pan on the grill and cover loosely with aluminum foil. If you have a pop up timer or heat safe meat thermometer, insert it into the turkey breast. Close the lid.
  4. Roast until the temperature in the breast reads 170 degrees F (75 degrees C) and the temperature in the thickest part of the thigh reads 180 degrees C (80 degrees C), about 4 hours depending on the temperature of your grill. When the temperature is getting close, remove the aluminum foil covering the turkey and allow it to brown during the final minutes of cooking. If it starts to brown too much, just cover it back up. Allow the turkey to rest for at least 20 minutes before carving.

Fail Proof BBQ Ribs Recipe

Preparation Time: 3 hours

Ingredients:
1 rack of pork ribs, Baby Back or Spare Ribs.

Salt, garlic powder, pepper or whatever you like.

Wood chips for smoking.

BBQ Sauce.
Directions: On your Weber grill or Gas Grill get it cooking as low as you can, indirect heat is the best.

Take a foil pouch of wood chips, half of them soaked half dry and poke holes in the top.

Cook for 1-1/2-2 hours keeping smoke going the whole time. Do not add BBQ sauce while on the grill.

Take off of grill, baste with BBQ sauce and put in casserole dish covered into 325 degree oven for 45 minutes to an hour. You can add a bit of water or beer to re-introduce some moisture.

The key to this is getting them back into the oven. If you think you stink at making ribs this is pretty much fool proof. Tinker with the timing on the grill depending on if you can get the heat low enough or not.

Dallas BBQ Beef

Ingredients:

* 3 lbs beef stew meat, remove excess fat
* 2 stalks celery, cut up
* 1 (14 ounce) bottle ketchup
* 2 onions, chopped
* 1 clove garlic, chopped
* 1/2 green pepper, chopped
* 14 ounces bottled barbecue sauce (we like regular Open Pit)
* 1/2 pint sweet pickle relish
* 1/2 lemon, juice of

Directions:

Prep Time: 15 mins Total Time: 1/2 day

1. Place all ingredients except pickle relish and lemon juice in crock pot.
2. Cook on low 7-8 hours.
3. Mash with a potato masher until meat is no longer chunky and slightly shredded.
4. Stir in pickle relish and lemon juice.
5. Serve on toasted buns as a sandwich or we like it over mashed potatoes.
