Kindergarten BBQ Lesson: How to Make Cheeseburgers

Ingredients:
Hamburger Patties-

2 lbs ground hamburger
Salt and black pepper (to taste)
4 slices cheddar cheese
lettuce (washed and torn)
2 tomatoes (washed and sliced)
4 hamburger buns

Burger Sauce-

½ cup mayonnaise
1 tablespoon ketchup
1 tablespoon yellow mustard
4 slices dill pickle
¼ teaspoon garlic powder
¼ teaspoon paprika
1 pinch cayenne pepper

Step 1: To make the burger sauce- in a blender combine mayonnaise, ketchup, mustard, dill pickle slices, garlic powder, paprika, and cayenne pepper. Blend until smooth. Pour into a bowl, cover, and refrigerate until needed.
Step 2: Form ground hamburger into 4 patties. Season on both sides with salt and pepper. Heat an outdoor grill to medium-high heat. Grill hamburgers for 5-7 minutes per side or until the internal temperature has reached 160 degrees. During the last few minutes of cooking top each burger with a slice of cheddar cheese. Once the cheese has melted remove from the grill.
Step 3: To assemble burgers. Place a hamburger patty on the bottom half of a bun. Top with lettuce and tomato. Spread a layer of the burger sauce onto the bottom of the top half of the bun. Place on top burger.
Yield: (4 Servings)

Saucy BBQ Pork Chop

ngredients:
* 4 (1/4 lb) center-cut pork loin chop, bone in (About 1 lb)
* 1 teaspoon vegetable oil
* 1 onion, sliced
* 1 green pepper, chopped
* 1/2 cup barbecue sauce
Directions:
Prep Time: 5 mins  Total Time: 30 mins
1. Brown chops in oil in large non stick skillet on medium heat, 5 minute on each side. Remove skillet, keep warm.
2. Add vegetables to skillet, cook and stir 5 minute.
3. Add BBQ Sauce, bring to simmer.
4. Add chops to skillet, spooning sauce over top.
5. Simmer 3 to 5 min or until heated through, turning chops once.

Mexican Style Lobster BBQ

Ingredients:

One cooked lobster
1 minced garlic clove
1 tablespoon of mixed cilantro
1 lime
1 tablespoon of butter
Salt and pepper to taste

If you’re a lobster purist, you’ll need to cook a fresh lobster first, preferably in a pot of boiling water. Sadly, the lobster must be live when it’s cooked, since dead lobsters can be toxic. Once it’s done, carefully clean your lobster, being extra sure to remove and discard the viscera from the body cavity.

Once you’ve got a cooked, cleaned lobster in play (however you managed it), put your butter, cilantro, garlic, and salt and pepper in a small bowl, then cut the lime in half and squeeze all the juice from one half of the lime into the bowl. Mix thoroughly.

Rub the cooked lobster with this mixture inside and out, then toss the critter onto your hot barbecue grill, cut side down. Let your barbecued lobster cook through and brown a bit before taking it off the grill. This shouldn’t take more than 2-3 minutes

There should be some butter mixture left, so melt it down and serve it with the lobster, along with wedges from the remaining lime half. Easy!

You’ll be licking your fingers and lips in no time, and I guarantee you that preparing (and eating) that lobster barbecue will be one of your more memorable grilling experiences.

Become an officially sanctioned barbecue judge

Over in Kansas City, there’s a class you can take to become a sanctioned BBQ Judge, its a 1 day class.

Marty Wheeler, the director of marketing and development with the UPC, said attending won’t guarantee you a spot as a judge for the March event, but it is a good first step.

“We give serious consideration to local applications for judges,” he said.

The Jan. 22 class will be taught by KCBS instructor Ron Harwell who will teach you how to evaluate on three criteria: taste, appearance and texture.

“We are trying to have at least 70 people in the class, but we can take a few more than that,” Wheeler said.

And it is a popular program. The folks at KCBS estimate that they have in excess of 15,000 judges in their program. They need that many judges to take part in the more than 300 sanctioned barbecue contests every year.

I had the good fortune to actually take this course a couple of years ago. It was an eye-opening experience for me.

It was at the same time very intense and incredibly fun. We learned everything from what to look for when the meat is presented to the table to how to discern different cuts of meat.

But the main thing I remember about the class was the food. See, you can’t show a person how to judge good barbecue without giving some very tasty visual aids. That is, some good barbecue to practice on.

“We will have at least one or two professional teams cooking up samples that will be submitted to the class,” Wheeler said.

Cost of the course for KCBS members is $60 and $100 for non-members. Wheeler said the deadline for registration is Jan. 19. The quickest way to access an application is at the KC local contest website, http://www.bbqmobile.net

Jets visit the Colts

Sexy Rexy Ryan, and his Jets, whom he still thinks are the best team in the NFL, visit Peyton Manning and the Colts. The game is Saturday night, 7 pm. Big Racks BBQ will have the game on their many hi-def big screen TVs.

Last year they met, the Jets had a good first half defending Manning, then after reviewing what the Jets were doing on defense, Manning played better, and the Colts won.  This year, the Colts suffered tons of injuries, they got Addai back, and their run game has improved. The Jets, are a circus, first Hard Knocks with Rex’s potty mouth, the word about Cromartie and his many kids, then Sal Alosi tripping the Dolphins gunner, the foot fetish buzz, hey they have been married over 20 years, if they do role play and foot fetish, between husband and wife, thats fine, just don’t upload it to the net.

How will Sanchez play? I think thats the key, we know Manning will have the Colts put up over 20 points, can the Jets offense play like it did near the end of the year, scoring well?

Indy is favored by 3 at home. I’m crazy, but I’ll call it a PUSH, they will win by 3

Can Arizona come back?
