Grilled Beef Ribs with Sweet-and-Sticky BBQ Sauce

Both the sauce and the ribs can be made ahead, leaving just the grilling to be done at the last minute.

  • 3 1/2 cups ketchup
  • 1 cup honey
  • 1 8-ounce can crushed pineapple in juice
  • 2 1/4 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried crushed red pepper
  • 3 racks beef back ribs (about 9 pounds total), each rack cut in half
  • 2 1/2 cups coarsely chopped celery
  • 1 onion, halved lengthwise
  • 1 1/2 cups coarsely chopped carrots
  • 2 whole bay leaves
  • 10 whole black peppercorns
  • 1 tablespoon salt

Combine first 7 ingredients in large deep saucepan. Bring to boil. Reduce heat to low and simmer until very thick, stirring occasionally, about 1 hour. Cool sauce. (Can be made 1 week ahead. Cover and refrigerate.)

Place ribs in heavy large pot. Add celery, onion, carrots, bay leaves, peppercorns and 1 tablespoon salt. Add enough water to cover ribs and bring to boil. Reduce heat to medium and simmer until meat is tender, about 1 hour. Using tongs, remove rib racks from pot. Cool slightly. Cut between bones into individual ribs. (Can be made 1 day ahead. Cover; refrigerate.)

Prepare barbecue (medium heat). Brush ribs with some of sauce. Grill ribs until brown and thickly glazed, occasionally turning and basting with more sauce, about 10 minutes.

Grilled Chicken Thighs in Sweet BBQ Sauce

Ingredients:

chicken thighs

2 chicken thighs
30 ml teriyaki sauce (2 tablespoons)
30 ml soy sauce (2 tablespoons)
45 ml ketchup (3 tablespoons)
1 tablespoon ginger (ground ginger is OK too)
3 tablespoons caster sugar (for a healthier choice use sugar substitute)

Directions:

Prep Time: 3 mins Total Time: 27 mins

1 Mix all the ingredients in a bowl and let the chicken marinate for at least 20min.
2 Pre-heat the grill for 2 minutes.
3 Grill the chicken thighs for 12 minutes on each side. Do not turn more than once but make sure you rotate the grill once, so that the chicken browns evenly.

Savoury Apple Stuffed BBQ Pork Sirloin

Ingredients:
Roast
8 -10 lbs pork sirloin roast
Marinade
3 cups apple cider
Stuffing
5 cups bread cubes
3 cups chopped apples
1/2 cup raisins
1/2 cup craisins
1/2 teaspoon garlic powder
1 teaspoon dried sage
3/4 cup finely chopped onion
1 cup apple cider
1/2 teaspoon black pepper

Directions:
Prep Time: 40 mins Total Time: 3 3/4 hrs
1 Cut your roast in half lengthwise and unfold it open like a book. Put it in a roasting pan and pour the apple cider over it. Inject some of the cider into the roast at 1″ intervals. (this takes approximately 1 beer). Set aside.
2 Prepare the stuffing: Mix all ingredients together in a large bowl, making sure all bread is moistened with the apple cider. Spoon approximately half of the stuffing onto the center of the pork, wrap the remaining in a foil packet.(another beer).
3 Fold over one side of the pork so that the stuffing is now in the middle of the meat. Tie with butcher twine. Put the roast back into the pan and let marinate for a few hours or overnight.
4 Cooking instructions: Preheat your coals, or gas bbq if that’s what you have. If using coals: Separate coals to either side of bbq leaving a space in the middle. Put roast directly over coals on one side, fat side down. Let roast this way until seared,(approx. 1 beer) then turn over and place roast in center of bbq, over the space, between the 2 beds of coals. Let roast until internal temperature reaches 170 with meat thermometer (approx 3 hours or 6 beers).
5 If using gas bbq: After preheating bbq, put roast on fat side down until seared (approx. 20 mins). Turn off one burner and turn the roast over placing over top of side with burner “off” Turn other burner down to “low”. Put foil stuffing packet on bbq with roast. Roast until internal temperature reaches 170 with a meat thermometer. (approximately 3 hours).
6 Cut strings, scoop out stuffing and slice roast into 3/4″ thick slices.
7 Mix stuffing with stuffing from packet and serve separately ( or with beer).

Martha Stewart: Memphis Barbecue

Barbecue east of the Mississippi River means pork, especially in Memphis where pork shoulder and ribs reign. Every year, Memphis plays host to the World Championship Barbecue Cooking Contest, a three-day event where more than 240 teams compete and ninety thousand spectators gather.

Held in Tom Lee Park, the contest honors barbecue in all of its forms, from three different contests for sauces alone to another three for a category called “anything but,” in which types of meat other than pork are judged. The main event is pork barbecue cooked Memphis-style — “low and slow.” The pork barbecue contest is divided into three categories: ribs, shoulders, and whole hog, comprising samples from such sections as tenderloin, ham, and shoulder.

Each entry is judged on three qualities — appearance, tenderness, and flavor — along with the team’s presentation, which includes elaborate descriptions of how the meat is prepared. This is a serious affair for most contestants, who frequently compete on the national circuit, spending tens of thousands of dollars a year on equipment, travel, and supplies. During the preliminary rounds, on-site judges visit each team’s booth, while others conduct blind tastings of numbered samples. After the finalists are chosen for each division, they go on to compete for the title of grand champion.

Martha Stewart Living food editor Susan Spungen was invited to participate as a judge. During her trip to Memphis, she learned some tips for perfect barbecue and got some of the competitors to reveal their prize-winning secrets. According to some of the contestants, the key to delicious barbecue is starting with a dry rub, a blend of spices massaged into the meat the night before cooking and sprinkled on again before serving. According to other pit masters, however, the only essential ingredient for moist, flavorful meat is time — it takes up to an entire day and night to cook the meat. Still others say that there is no true secret to success other than years of experience. No matter what the technique, great barbecue is delicious, producing tender, succulent meat with a rich, smoky flavor.

Sweet ‘N’ Tangy Barbecue Sauce

Jalapeno pepper, cayenne and chili powder lend a bit of bite to this low-sodium sauce from our Test kitchen home economists. Try it on pork, chicken, beef ribs and more

Ingredients

  • 1 large onion, chopped
  • 1 jalapeno pepper, seeded and chopped*
  • 1 tablespoon olive or canola oil
  • 1 1/2 cups water
  • 1 (6 ounce) can tomato paste
  • 1/2 cup packed brown sugar
  • 1/2 cup cider vinegar
  • 1/4 cup honey
  • 2 tablespoons chili powder
  • 1 tablespoon molasses
  • 2 teaspoons chicken bouillon granules
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon pepper
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon liquid smoke (optional)

Directions

  1. In a saucepan, cook onion and jalapeno in oil over medium heat until tender and lightly browned. Add the next 13 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes or until thickened, stirring occasionally. Remove from the heat. Stir in liquid smoke if desired. Store in the refrigerator for up to 2 weeks.

BBQ Chicken Pizza

Ingredients:

individual pizzas

2 ready to bake prepared pizza crust
1 cup feta
2 boneless skinless chicken breasts
1 tomato
1 medium yellow onions or 1 medium purple onion, sliced
1 bottle bull’s eye roasted garlic stampede barbecue sauce

Directions:

Prep Time: 15 mins  Total Time: 35 mins

1 Turn on BBQ to med-high to preheat.
2 BBQ chicken breasts on medium heat until tender and juicy.
3 Baste chicken with BBQ sauce.
4 When chicken is cooked, slice into thin strips.
5 Next fry onions with a little butter until caramelized.
6 Now, assemble your pizzas.
7 Spread a layer of the BBQ sauce on the shells.
8 Then add a layer of sliced tomatoes.
9 Next add the sliced chicken, then onions, and top off with the feta.
10 On low heat put shells directly on BBQ rack.
11 Cook until crispy, hot, and feta is soft.
12 Enjoy.

Cranberry BBQ Chicken

Ingredients

  • 1 (2 to 3 pound) whole chicken, cut into pieces
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup chopped celery
  • 1 onion, chopped
  • 1 (16 ounce) can whole cranberry sauce
  • 1 cup barbecue sauce

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet brown the chicken in butter/margarine. Season with salt and pepper. Remove from skillet and place in a lightly greased 9×13 inch baking dish.
  3. In the drippings (in the skillet), saute onion and celery until tender. Add cranberry sauce and barbecue sauce. Mix well.
  4. Pour cranberry mixture over chicken and bake in the preheated oven for 90 minutes, basting every 15 minutes.

Shrimp Sandwiches with Barbecue Sauce

  • 1 tablespoon olive oil
  • 3/4 pound medium shrimp (about 24), shelled and deveined
  • 2 teaspoons mayonnaise
  • 3 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon Tabasco, or to taste
  • 4 sesame seed hamburger buns, halved
  • 1 cup prepared coleslaw

In a large non-stick skillet heat oil over moderately high heat until hot but not smoking and sauté shrimp with salt and pepper to taste 2 to 3 minutes, or until just cooked through. Transfer shrimp with a slotted spoon as cooked to a plate and cool. Cut each shrimp in half horizontally and in a bowl toss with mayonnaise and salt and pepper to taste.

In a small bowl whisk together ketchup, Worcestershire sauce, and Tabasco and spread evenly on cut sides of buns. Make sandwiches on buns with shrimp and coleslaw.
