Spicy Barbecued Brisket recipe

1 beef brisket, 4-5 lbs. (2-2.5 kg), trimmed of excess fat
3 cloves garlic, cut into slivers
2 tbsp. vegetable oil
1 tbsp. coarse or kosher salt
1 1/2 tsp. dried thyme
1 tsp. freshly ground pepper
1 tsp. paprika
1 tsp. cayenne pepper
Basic barbecue sauce

Make several slits in the surface of the brisket and poke a sliver of garlic into each one. Rub the brisket with the oil. In a small bowl stir together the salt, thyme, pepper, paprika and cayenne pepper and rub over the meat.Prepare a fire for indirect-heat cooking in a covered grill. Position the oiled grill rack 4-6 inches (10-15 cm) above the fire. Place the brisket on the rack so it is not directly over the coals, cover the grill and cook for 1 hour, turning once. Brush with some of the sauce and cook 1-1 1/4 hours longer, turning and brushing lightly with sauce two or three times more.

Remove from the grill and let rest for 10 minutes. Carve into thin slices across the grain. Arrange on a warmed platter and spoon a little sauce over the top. Pass the remaining sauce in a bowl at the table. Serves 8-10.

Barbecued chicken, corn and zucchini with herb sauce

Preparation Time
15 minutes

Cooking Time
30 minutes

Ingredients (serves 4)
8 chicken thigh fillets, fat trimmed
2 corn cobs (with husks)
6 small (about 70g each) zucchini, halved lengthways
1 tbs olive oil
lemon marinade
60mls (1/4 cup) fresh lemon juice
2 tbs olive oil
1/2 tsp chilli powder, or to taste
herb sauce
1/2 cup (firmly packed) coriander leaves
1/2 cup (firmly packed) mint leaves
1/4 cup coarsely chopped fresh chives
2 garlic cloves
1 1/2 tbs fresh lemon juice
125mls (1/2 cup) olive oil
Salt & ground black pepper, to taste

Method
To make the lemon marinade: combine the lemon juice, olive oil and chilli powder in a medium glass or ceramic bowl. Add the chicken thigh fillets and stir to coat with the marinade. Cover and place in the fridge for 30 minutes to marinate.
Meanwhile: carefully peel back the husks from the corn cobs, leaving them attached, and remove and discard the silk. Pull the husks back around the corn cobs and tie at the end with unwaxed string to secure. Place the corn cobs in a bowl or sink of water for 15 minutes to soak (this will help keep the corn moist during cooking).
To make the herb sauce: place the coriander, mint, chives, garlic and lemon juice in the bowl of a food processor and process until roughly chopped. Add the olive oil and process until well combined. Season with salt and pepper. Cover and set aside until required.
Preheat barbecue grill on high.
Place the corn on preheated barbecue grill and cook, turning occasionally, for 30 minutes or until tender when tested with a skewer.
After the corn has been cooking for about 20 minutes, remove the chicken from the marinade and place on the barbecue grill with the corn. Cook for 8-10 minutes, turning halfway through cooking, or until just tender.
Toss the zucchini halves with the olive oil. After the chicken has been cooking for about 2 minutes, place the zucchini cut-side down on the barbecue grill and cook for 6 minutes, turning halfway through cooking, or until the zucchini is charred and tender.
Remove the chicken, zucchini and corn from the barbecue as they are ready. Cut the corn cobs in half. Serve the chicken, zucchini and corn accompanied by the herb sauce.

Spare Ribs BBQ Sauce Recipe

One of the best things around to slow cook on the grill and smoker are spare ribs. Pork spare ribs are so juicy and delicious when cooked the right way. Slow cooking them on the stove works great too and especially if the weather is terrible. Patience is a virtue when it comes to ribs.

Here is an easy recipe for a Spare Ribs BBQ Sauce Recipe that you can cook on the stove if you don’t want to smoke or grill them.

3 1/2 to 4 lbs. pork spareribs, uncooked
1 tablespoon vegetable oil
1/2 cup to 3/4 cup of soy sauce
3 tablespoons brown sugar
1/4 cup dry sherry
1/4 teaspoon salt
1/4 teaspoon ground black pepper

In a large cooking pot add the pork spareribs to the vegetable oil, turning often until all sides are lightly browned. You might have to cut down the ribs to get them to fit into your pot. Remove ribs and drain off the vegetable oil. Stir together in the pot the soy sauce, brown sugar, dry sherry, salt and ground black pepper. Add ribs back in and stir until ribs are well coated. Place lid on the cooking pot and cook them over low to medium low heat for several hours until very tender. You can cut your cooking time in half by simmering them over medium heat. Watch them closely because of the sugar and stir them occasionally to keep them from sticking to the bottom of the pot.

Smokey Sweet BBQ Sauce

Ketchup
Molasses (or honey or corn syrup)
A little chili powder and cumin
A DROP of liquid smoke
Garlic powder/salt
Onion powder/salt
Pepper

Simmer together and adjust seasoning to taste. You could also add a little mustard as well.

Barbecued Chicken Wings recipe

BARBECUED CHICKEN WINGS

1 lb. chicken wings
1/3 c. each soy sauce, honey, vinegar
1 clove garlic, mashed
1/2 tsp. ginger
3/4 c. chicken broth
1/2 c. sherry

Marinate chicken wings in remaining ingredients. Grill until golden and glazed, about 20 minutes, turning to cook all sides. Serves 6 in mixed grill.

BBQ NY Strip

A quick and easy way to make a tasty, tender steak on the grill! Marinate for a minimum of 2 hours

Ingredients

  • 1/2 cup extra virgin olive oil
  • 1/2 cup Worcestershire sauce
  • 1/4 cup minced garlic
  • 1/4 cup steak seasoning
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon Italian seasoning
  • 4 (1/2 pound) New York strip steaks

Directions

  1. In a bowl, mix the olive oil, Worcestershire sauce, garlic, steak seasoning, red wine vinegar, basil, and Italian seasoning. Pour into a large resealable plastic bag. Pierce steaks on all sides with a fork, and place in the bag. Gently shake to coat. Seal bag and marinate steaks a minimum of 2 hours in the refrigerator.
  2. Preheat grill for high heat.
  3. Lightly oil the grill grate. Discard marinade. Place steaks on the grill, and cook 7 minutes on each side, or to desired doneness.

Sad News: Tent death ‘classic’ poisoning from barbecue fumes

From across the pond, a story about barbecue taking a life

A woman who died while sleeping in a tent with a smouldering charcoal barbecue suffered “classic” carbon monoxide poisoning, an inquest has heard.

Tracey Screen, 34, from Chesterfield, Derbyshire, died while on holiday in Gwynedd with her husband and children.

Benjamin Screen told the inquest his wife’s death had left a “big hole” in their lives.

Coroner Dew Pritchard-Jones recorded a verdict of accidental death.

The inquest in Caernarfon was told Mr Screen and the youngsters, aged seven and four, were treated in hospital after he raised the alarm.

The family were staying a campsite at Gyrn Goch, between Pwllheli and Caernarfon. Gwynedd.

David Evans, of North Wales Fire and Rescue Service, said the barbecue had been lit at about 17:00 BST and a meal cooked, and then more charcoal added to maintain some warmth.

‘Dizzy’
He said the couple retired to bed between 22:00 BST and 23:00 BST.

He explained that as the coals began to cool the level of carbon monoxide would have risen.

The hearing was told the barbecue was moved to the central area of the tent.

Mr Screen told the inquest how he felt dizzy and fell to the floor after getting up in the night.

He said he tried shouting for help but got no response. Eventually he said he managed to crawl outside the tent and shout for help.

Mr Dewi Pritchard-Jones said: “The symptoms you described are classic carbon monoxide.

“The obvious lesson is barbecue charcoal is almost pure carbon and will create carbon monoxide and carbon dioxide.

‘Easily avoided’
“The smouldering of barbecue embers will create carbon monoxide and this is an obvious danger with barbecues used in a confined space.”

He added: “People should be aware of the dangers because fires and carbon monoxide deaths can be easily avoided.”

After the hearing, an emotional Mr Screen said his wife’s death had left a “big hole.” He said: “We miss her and love her.”
