Dallas BBQ Chicken Cobb Salad

Ingredients

4 chicken thighs, bone in
2 cups Mesa BBQ Sauce, recipe follows
Salt and freshly ground pepper

Directions

Marinate chicken in bbq sauce for 2 hours in the refrigerator. Remove from marinade and grill each thigh for 6 to 7 minutes on each side or until cooked through.

MESA BBQ SAUCE:

2 tablespoons (1/4 stick) butter
1/2 medium red onion, finely diced
3 garlic cloves, minced
6 plum tomatoes, coarsely diced
1/4 cup ketchup
3 tablespoons dark molasses
2 tablespoons Dijon mustard
2 tablespoons dark brown sugar
1 tablespoon honey
1 teaspoon cayenne
1 tablespoon ancho chile powder (available at Hispanic or specialty markets)
1 tablespoon pasilla chile powder (available at Hispanic or specialty markets)
1 tablespoon paprika
1 tablespoon Worcestershire sauce

In a large saucepan over medium heat, melt the butter and sweat the onion and garlic until translucent, about 3 minutes. Add the tomatoes and simmer 15 minutes. Add the remaining ingredients and simmer 20 minutes.

Puree the mixture in a food processor, pour into a bowl, and let cool at room temperature. May be refrigerated up to 1 week or frozen

BUTTERMILK DRESSING:

1/4 cup sour cream
3/4 cup buttermilk
2 cloves garlic, finely chopped
3 tablespoons finely chopped red onion
2 tablespoons fresh lime juice
1/4 teaspoon cayenne pepper
Salt and freshly ground pepper
3 cups red leaf lettuce, roughly torn
3 cups romaine lettuce, roughly torn
1/2 pound American blue cheese, crumbled
1 large avocado, peeled, pit removed and thinly sliced
1 Vidalia onion, peeled and sliced crosswise into 1/2-inch thick slices and grilled
2 plum tomatoes, quartered
Salt and freshly ground pepper

Mix all ingredients for dressing, and season with salt and pepper.

Arrange lettuce on 4 plates, top each plate with a chicken thigh. Garnish with blue cheese, avocado, onion and tomato. Drizzle with the buttermilk dressing.

Yield: 4 servings

Fallin’ Off the Bone Oven BBQ Ribs

Ingredients:
For the Ribs

* 6 lbs baby back ribs
* 1/4 cup apple cider vinegar
* 1/4 cup brown sugar

For the Sauce

* 1 tablespoon butter
* 1/2 cup minced onion
* 1 1/2 cups ketchup
* 1/2 cup beer (or water)
* 6 tablespoons light brown sugar
* 6 tablespoons apple cider vinegar
* 1 1/2 tablespoons Worcestershire sauce
* 1 tablespoon maple syrup
* 2 1/2 teaspoons chili powder
* 1 teaspoon dry mustard
* salt (to taste)
* pepper (to taste)
* hot sauce (to taste)

Directions:

Prep Time: 1 hr  Total Time: 3 hrs

1.  —Preparet he Sauce—.
2.  (Sauce can be prepared up to one week ahead).
3. Saute onion with butter in a saucepan until tender, about 3-5 minutes.
4. Stir in the remaining sauce ingredients and bring to a boil.
5. Lower heat and simmer about 35-45 minutes or until sauce is thickened.
6. –Prepare the Ribs—.
7. Preheat oven to 350 degrees F.
8. Cut the ribs into individual pieces.
9. Toss the ribs with the vinegar, then sprinkle with the brown sugar.
10. Wrap the ribs tightly in foil and place on a rack in a roasting pan; fill bottom of roasting pan with water up to 1/2 inch deep.
11. Cover roaster and place it in the preheated oven and bake for 1 1/2 hours, checking occasionally to add water at the bottom (keep 1/2-inch there as needed).
12. Remove roaster from oven, drain water from bottom and remove rack.
13. Unwrap ribs and place them in the bottom of the roaster.
14. Pour sauce over the ribs (as much as you desire up to the whole amount), and toss ribs to coat with sauce.
15. Cover the roaster, return it to the oven and bake for 25-35 minutes more, or until the ribs are tender and darkening around the edges.
16. Remove from oven and serve.

BBQ Ribs you can make in your oven

Ingredients:

* 3 -4 lbs country-style boneless pork ribs
* 1 teaspoon salt
* 1 (455 ml) bottle barbecue sauce from Big Racks BBQ
* water

Directions:
Prep Time: 5 mins  Total Time: 2 1/4 hrs

1. Bring water to a boil.
2. Add ribs, one by one; add salt.
3. Boil for about 1 hour, making sure the pot doesn’t froth over too much! (When I do that, the next time I turn on my stove it smokes and it is stinky!)
4. Preheat oven to 350 degrees Fahrenheit.
5. Remove ribs from water.
6. Place ribs in a 9 by 4 inch glass baking pan.
7. Pour the barbecue sauce evenly over the ribs.
8. Bake for 20 to 30 minutes.

Ribs with Peach BBQ Sauce

Ingredients
Peach Dry Rub:

2 tablespoons kosher salt
2 tablespoons smoked paprika
1 tablespoon garlic powder
1 tablespoon ancho chili powder
1 tablespoon dark brown sugar
2 (3-pound) slabs pork spare ribs
Hickory chips, saturated
Charcoal briquettes, saturated
Gina’s Peach BBQ sauce, recipe follows

Directions

For the dry rub:

Add the ingredients to a bowl and stir until thoroughly incorporated. Keep the rub in an airtight container for up to 6 months.

Chef’s Note: Reserve 1 tablespoon for Gina’s Peach BBQ Sauce.

Rinse and dry the ribs. Put them on a clean cutting board and pull off the thin fatty skins that line the underside of the ribs. Trim the ribs of all excess fat. Liberally season each side with the peach rub and wrap the ribs in plastic. Refrigerate for at least 8 hours so the flavors can permeate the meat.

Fill a grill with the chips and briquettes and preheat them to 250 degrees F.

Put the ribs, meatier side down, over indirect heat and cook for 3 hours with the grill cover down. Turn the slabs and cook until the ribs bend easily, about 1 hour. At this point, remove them from the grill. Sprinkle the slabs with some additional peach rub and slice it into portions. Cut each slab into individual ribs and coat with some of Gina’s Peach BBQ Sauce. Arrange on a serving platter and serve.
Gina’s Peach BBQ Sauce:

1 tablespoon butter
1 small shallot, diced
2 cloves garlic, diced
Kosher salt and freshly cracked black pepper
1 tablespoon reserved Peach Dry Rub, see recipe
2 cups ketchup
2 cups peach nectar
1 tablespoon Dijon mustard
2 tablespoons apple cider vinegar
1 tablespoon Worcestershire sauce
1/2 lemon, juiced

Melt the butter in a large saucepan over medium heat. Add the diced shallot and garlic and saute until tender, about 3 minutes. Season to taste with salt, black pepper and the reserved peach rub and stir with a wooden spoon until fragrant. Stir in the ketchup, peach nectar, mustard, apple cider vinegar, Worcestershire and lemon juice.

Bring the ingredients to a boil, then reduce the heat to a simmer. Let cook for 30 minutes, stirring occasionally. Adjust the seasonings, if necessary, and enjoy.

Sweet ‘N’ Tangy Barbecue Sauce

Jalapeno pepper, cayenne and chili powder lend a bit of bite to this low-sodium sauce from our Test kitchen home economists. Try it on pork, chicken, beef ribs and more

Ingredients

  • 1 large onion, chopped
  • 1 jalapeno pepper, seeded and chopped*
  • 1 tablespoon olive or canola oil
  • 1 1/2 cups water
  • 1 (6 ounce) can tomato paste
  • 1/2 cup packed brown sugar
  • 1/2 cup cider vinegar
  • 1/4 cup honey
  • 2 tablespoons chili powder
  • 1 tablespoon molasses
  • 2 teaspoons chicken bouillon granules
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon pepper
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon liquid smoke (optional)

Directions

  1. In a saucepan, cook onion and jalapeno in oil over medium heat until tender and lightly browned. Add the next 13 ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes or until thickened, stirring occasionally. Remove from the heat. Stir in liquid smoke if desired. Store in the refrigerator for up to 2 weeks.

Texas BBQ Beef Brisket

Brisket gets big Texas flavor from a BBQ sauce made with red wine, chili powder and lots of garlic.

Ingredients

  • 1 (3 pound) boneless beef brisket, flat cut
  • 3/4 cup barbeque sauce
  • 1/2 cup dry red wine
  • Rub:
  • 2 tablespoons chili powder
  • 1 tablespoon packed brown sugar
  • 1 1/2 teaspoons garlic powder

Directions

  1. Combine rub ingredients in small bowl; press evenly onto beef brisket. Place brisket, fat side up, in stockpot.
  2. Combine barbecue sauce and wine in small bowl. Pour around brisket; bring to a boil. Reduce heat; cover tightly and simmer 2-1/2 to 3 hours or until brisket is fork-tender. Remove brisket; keep warm.
  3. Skim fat from cooking liquid. Bring cooking liquid to a boil. Reduce heat to medium and cook, uncovered, 8 to 10 minutes or until reduced to 1 cup sauce, stirring occasionally.
  4. Trim fat from brisket. Carve diagonally across the grain into thin slices. Serve with sauce.
